Mondet Brut Grande Réserve

Champagne Grande Réserve is an expression of elegance and tradition, the result of extensive aging and a skillful blend of 60% Meunier, 20% Pinot Noir and 20% Chardonnay grown on clay-limestone soils that confer structure and complexity. The first fermentation takes place in stainless steel tanks, followed by a blend of three vintages in tiled cement vats, where the wine breathes and fully develops its fruity notes. After natural filtration without fining, it is bottled at the estate and aged for at least four years on lees in chalk cellars, then an additional year on cork after disgorgement. The 8 g/l dosage is made with a house liqueur of cane sugar and Champagne wines aged two years in oak barrels, adding softness and depth.

Visually, it shows a bright golden yellow with amber reflections, animated by a wide and creamy foam. On the nose, it opens with fruity aromas of currant and yellow fruit that evolve into mature notes of dried fruit and mirabelle, with a delicate final touch of licorice. On the palate, it is round, sweet, and fruity, supported by a straight structure and a long, harmonious finish where freshness meets aromatic richness.

Champagne Grande Réserve is perfect at any moment—from a refined aperitif to an important dinner. It pairs magnificently with 24-month aged Comté, cheese gougères, and beef carpaccio, but reaches sublime expression with truffle pairings: its fine effervescence and aromatic complexity elevate dishes such as beef tartare with black truffle shavings, fried eggs with white truffle, Parmesan and truffle risotto, or aged cheeses served with a veil of truffle honey. VINIFICATION

Prima fermentazione in vasca d’acciaio, a cui segue l’assemblaggio di 3 anni di vendemmia nelle in vasche di cemento piastrellato per una migliore aerazione e lo sviluppo del fruttato. Filtrazione naturale, senza chiarificazione. Imbottigliato nella cantina viene poi lasciato invecchiare per un minimo di 4 anni sui lieviti nelle cantine di gesso. Segue un invecchiamento di un anno su sughero dopo la sboccatura.
