Mondet Blanc De Noirs

Champagne Blanc de Noirs is born from the desire to preserve and enhance the authenticity of the terroir and the genetic heritage of the estate’s old Pinot Noir vines. From this pursuit of purity and identity comes a Champagne of great personality, crafted from 100% Pinot Noir with loose clusters (“à spargoli”), which produce wines of finesse, intensity, and power. Grown on clay-limestone soils, it reflects the mineral richness and depth of its origins.

The first fermentation takes place in stainless steel vats, with around 10% vinified in oak barrels to add structure and aromatic complexity. A long four-year aging on lees enhances its creaminess and persistence. The Extra Brut dosage (2 g/l) maintains the authentic character of Pinot Noir, revealing a perfect balance between strength and elegance.

Visually, it shows a bright golden yellow, enlivened by vivid effervescence that forms a crown of creamy white foam. On the nose, it opens with mature and aromatic notes reminiscent of dried fruit, walnuts and dried flowers, revealing a complex and refined evolution.
